After enjoying sencha tea, please try out making *TSUKUDANI.
(*a soy sauce-simmered type of preserved dishes )
It is great to have with onigiri and sushi rolls etc!
 
 
THE GREEN TEA TSUKUDANI  ( 10min )
 
● Used organic sencha leaves… Dried 10g, Wet 50-80g
● Soy sauce (Tamari)… 2tbsp
● Sake ( or white wine ) … 1tbsp
● Mirin ( or maple syrup ) … 1tbsp
● Sesame oil … 1tsp
● A little of sesame seeds (as you like)
 
⑴Rinse tea leaves in a bowl and drain it. The water is room temperature.
⑵ Stir-fry tea leaves on a medium heat with the rest of ingredients until the water is gone ( Turn the heat down gradually ).
 
Goes very well with freshly cooked rice!
