Tips to Cook Perfect 100% Soba

 

1.Boil in small quantities in plenty of water

Important: First, bring more than 3L of water to a rolling boil*

*reached 212F (100℃) – big bubbles quickly rise to the surface.

The bigger the pot, the better. Convection in the pot prevents the noodles from sticking together.

 

When you try for the first time, boil 100g noodles.

(once you get used to it, step up to 200g, a packet of soba)

 

2.Do not stir the noodles too often

Do not stir it repeatedly with chopsticks. It will break up the noodles.

Stir it gently just once or twice to check they don’t stick together.

Boil it for 5 min and turn off the heat. Cover with the lid and wait for 1-2 min.

 

3.Rinse the noodles with water

Drain the hot water using a colander.

First, soak the noodles with the whole colander in a bowl of water as shown.

 

Once it’s cooled off, rinse with running water gently several times.
